Desalination is used very extensively in Spain - Barcelona relies heavily on it, for example. It's a natural candidate, give the cheap energy from solar and extensive coastline. It does have ecological constraints, though - the increased salinity in the area around the undersea outfall pipe is an issue, and Spain is aiming to protect more of its coastline.

Might it be feasible to use salt as a by-product instead for molten salt heat storage facilities, perhaps? I'm sure the right specialists are looking into such possibilities.
