I spent a memorable San Juan in Ferrol, Galicia, many years ago. A huge bonfire was set up in a local car park, with the fire brigade on hand all night to spray water around the edges and keep it under control (which seeems like madness in the current drought conditions, even in traditionally rainy Galicia). Sardines were being barbecued over coals and handed out to all. Truly magical.
