It's always a tricky one: growth = automation/outsourcing once inhouse staff can't cope with the volume = weaknesses that can be exploited.
In a small café where the waiting staff pour the drinks, you know who gets what. Once you put in self-serve soda dispensers, people start abusing the system, and you can only rely on their honesty (hah!) or detection of a few cases, after the event.
